OK so Gordon Ramsey has an awesome tomato soup recipe that I want to try, but until then I made this simple sugar free recipe.
First, I diced some yellow onion and garlic and put in a sauce pan with olive oil. I sautéed that for a bit.
Then I added 28 ounces of crushed tomatoes.
with 1 package of organic vegetable broth.
Added a few sprigs of thyme and let simmer for awhile.
Take out thyme and put in a blender and blend. Pour into bowl and eat!! YUM YUM!
It was really good. And, I'm keeping my glycemic levels low. GO ME! I also made a pesto sauce and some bruschetta. I'll post that next.
