Chicken Alfredo * better than Olive Garden!

Do you make your own alfredo sauce or do you buy one already premade?  Well, in the past I've tried to buy them already made and I felt they always tasted gross, which ultimately resulted in only eating alfredo and pasta occasionally when we went out to dinner.  Will really likes the chicken alfredo from Olive Garden.  A few weeks ago, he went to the grocery store, when he came home he said he was going to make chicken alfredo.  We tried it, and neither of us liked it.  So, I decided to make it myself.  I looked at various recipes and this is the best one that Will really enjoyed! I must say, if you like Olive Garden alfredo sauce then you will love this recipe. 



First, melt 6 tablespoons of quality butter *salted and add 1 tablespoon of minced garlic. 


Then add 2 tablespoons of flour and whisk until smooth.


Add 1 & 1/2 cup of heavy whipping cream and 1 & 1/2 cup of milk. *stir well, simmer then reduce heat.
add 1/2 cup of grated parmesan cheese and 1/2 cup of grated romano cheese. If you buy fresh and grate yourself, and allow cheese to be at room temperature before adding, you'll be happy with the texture.  



Let simmer and the sauce will thicken. * I did not add any salt, but I did add some pepper to taste.



For the chicken: I baked chicken breast using the following season packet:  Other options: skip the chicken or if you don't have much time, buy an Italian herb rotisserie chicken.




Next, I added the fettuccini noodles.  I like the meal to have more sauce so I used about 3/4 of a package.

When I took these pics, I added the chicken last because it was still warm.  However, if you add chicken I would add it to the sauce, simmer, then pour it over the noodles in a serving dish.


Garnish with parsley if desired.  I like to have bruschetta or rosemary sour dough bread on the side or ahead of the meal!
