I made some of the best homemade OATMEAL CREAM PIES!!! YUM!
The recipe was super easy to follow! I know I will make them again for sure.
They turned out so golden, light, and with a wonderful texture.
The filling was a traditional buttercream frosting. Not too sweet. Perfect!

1 cup packed dark brown sugar
1/2 cup granulated sugar
1 large egg, at room temperature
2 teaspoons pure vanilla extract
1 teaspoon dark molasses
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
3 cups quick-cooking oats

3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups powdered sugar
1 tablespoon milk
